Honey Mustard Marinated Grilled Chicken

I think my favorite food in the summer is done on the grill!  I have a few favorites - Lemon Caesar Grilled Chicken from my friend, Kathy and Lemon- Basil Grilled Chicken from my friend, Pat.  Kathy is a current neighbor and Pat is a former neighbor - I love good neighbors! I also highly recommend Mexican Flank Steak from my dear friend Lya!

This past weekend, we tried a new one from Two Peas and Their Pod.  I have followed them for years on Ingram and Maria has amazing recipes.  Her Honey Mustard Chicken was fabulous.  I marinated it for several hours.  Chris grilled it.  It does have honey in it so you want to grill on a clean grill and watch for it not to get too hot and stick to the grill.  This chicken had amazing flavor... but we like mustard.  Visit Maria over at Two Peas and Their Pod for more details.

Happy Grilling!

Serve the Honey Mustard Chicken with fresh Corn on the Cob and this yummy Asparagus Pasta Salad!

Honey Mustard Chicken - adapted from Two Peas and Their Pod

4 skinless, boneless chicken breasts

Marinade - Reserve 1/4 cup for basting chicken

1/4 cup whole grain mustard

1/4 cup Dijon mustard

1/3 cup honey

2 Tbsp olive oil

juice of one lemon (I used 1 Tbsp of lemon juice from fridge)

3 cloves garlic, minced

1/2 tsp paprika

1/2 tsp dried thyme

Mix all of the ingredients together in a large measuring cup.  Salt and paper the chicken and add the chicken to a large gallon ziplock bag. Pour over the marinade.  Seal the bag and marinate for at least 30 minutes or up to 8 hours.  Grill the chicken, covered for 5 - 7 minutes and then flip and baste the chicken with the reserved marinade. Girl another 5 - 9 minutes or until internal temperature reaches 165 degrees.  Remove from grill and let chicken rest for about 5 minutes.

Chicken Sate with Peanut Butter Sauce

I love peanut butter so I thought I would give this recipe a try.  I don't usually love Asian recipes with peanut butter sauce, ginger, etc.  My husband loves these types of recipes so I made this one for him.  It was actually really good.  Thank you Stacie ... for this recipe!  I think it is a Smucker's recipe.... but I couldn't find it on their site.

Also, I was trying to make it a little healthier so I used coconut sugar instead of brown sugar and Bragg's Liquid Aminos instead of soy sauce.  It was still very good!

Once again, not a great picture.  I drizzled the sauce on... we loved the sauce.

Chicken Sate with Peanut Butter Sauce

Sate':

1lb skinless, boneless chicken breasts, cut into 8 strips
1 Tbsp light brown sugar
2 1/2 Tbsp low-sodium soy sauce
2 tsp. bottled ground fresh ginger ( I grated fresh and used 1 tsp)
1 tsp grated lime rind
2 cloves garlic, minced
1/4 tsp crushed red pepper
8 skewers - wooden or metal

Sauce:

1 Tbsp light brown sugar
1 1/2 Tbsp low-sodium soy sauce
1 Tbsp fresh lime juice
2 Tbsp natural-style, creamy peanut butter (I used a little more)
1 garlic clove, minced
1/4 tsp crushed red pepper

Prepare grill.  If using wooden skewers, soak them in water for a few minutes.

Combine chicken and all of the sate' ingredients in medium bowl and let stand ten minutes.  Combine all of the sauce ingredients in another medium bowl, stirring until the sugar dissolves.

Thread chicken strips on to prepared skewers.  Place chicken on grill rack coated with cooking spray.  Grill 5 minutes on each side or until chicken is done.

Serve chicken with sauce.  Serve with your favorite rice dish and a green vegetable.

Lemon Ceasar Grilled Chicken

As I mentioned in my last post - we love to grill in the summer.  My crazy friend Kathy gave me this yummy marinade.  She said it was their favorite and we loved it too.  I made it recently with the BLT and Avocado Pasta Salad.

Kathy is an amazing photographer.  She took Annie's senior pictures and will also take Jenna's.  If you live in Omaha and need a photographer - visit Kathy Johnson Portraits.

Okay - back to food!  Try this yummy marinade this weekend when you are grilling out.  AND - try Lemon-Basil Chicken - another one of our favorites!

Lemon Ceasar Grilled Chicken

1/2 cup lemon juice
1/3 cup vegetable oil
1/4 cup grated Parmesan Cheese
2 Tbsp. Dijon Style Mustard
1/2 tsp salt

Amazing Sauce for Amazing Ribs (or any meat)

I LOVE this sauce. I got this recipe from neighbors about 14 years when we lived in Katy, Texas. Janine and Scott moved in for a short time and we often grilled and hung out together. I am not a huge rib fan but I so love this sauce. I think this sauce would be amazing on any ribs or chicken, etc. Enjoy - and share with YOUR neighbors!

BBQ ribs

1 bottle Pickapeppa sauce (found near the Tobasco, ketchup, etc.)
1 cup honey
3/4 cup Heinz 57 sauce

2 racks of pork baby back ribs
Sliced onion

Put ribs in water with a sliced onion and bring to a boil. Cover and simmer for one hour. Chill until ready to cook. Mix sauce and grill at a low temperature for about 20-30 minutes. Brush with more sauce as they cook.

Lemon Basil Chicken

This is the perfect summer grilling chicken. My husband is an amazing griller so we grill often. I choose not to even learn how to grill since he does such a nice job - plus I just don't want to! :)

I LOVE this Lemon Basil Chicken. When we first moved to Omaha, our fabulous neighbors would invite us down to their house to cookout. Miss Pat and Mr. Phil as my girls call them were just the best neighbors. We were so sad when they moved back to Philadelphia. Miss Pat is a great cook and this is one of the many recipes I acquired while we were neighbors. I know this recipe will become a staple in your summer menu! Enjoy with corn on the cob, steamed broccoli and watermelon!

Lemon Basil Chicken

1/2 cup olive oil
1/4 cup lemon juice
2 Tbsp white wine vinegar
1 tsp grated lemon peel
1 Tbsp dried basil
2 cloves minced garlic
1/2 tsp salt
1/4 tsp ground pepper
4-6 chicken breasts, boneless, skinless

Place all ingredients in a ziploc bag and marinate for 30 minutes or longer. Grill!

Spicy Flank Steak

I have to say this is one of my FAVORITE recipes. I love it and my family loves it. We had this for dinner tonight and our oldest daughter said, "This is the BEST meal!" I have to admit that my husband is an awesome GRILLER. He always gets the meat perfect - never overcooked and that is so key with this flank steak. I highly recommend this recipe! The leftovers are just as yummy. I have even made this for a large crowd and served with Mexican Pinto Beans, Texmati Rice and Pico de Gallo. You're just gonna love it!

This recipe came from my dear Baylor friend - Lya! Lya is a great cook - I am always curious to know what Lya is cooking!

SPICY FLANK STEAK

¼ cup olive oil
¼ cup minced cilantro
4 garlic cloves, minced
2 tsp. salt
2 tsp. ground cumin
1 tsp. ground coriander
1 tsp. cayenne pepper
1 tsp. ground pepper
1 ½ lb flank steak

Mix marinade ingredients together and spread over both sides of steak. Marinate at room temperature for at least 30 minutes ( up to 2 hours). Grill approximately 5 minutes on each side. Slice diagonally across the grain and serve immediately.

** Ours took longer than 5 minutes on each side to get done – more like 10! Please don't overcook!
